Working closely with several local farmers, like George and Maurgo at Meadowbrook farm, our chef is able to bring the freshest organic produce to the table the very day it is pulled from the soil, year round. His contacts with the best seafood brokers enable him to provide some of the freshest seafood in the mountains.
Our chef´s creative touch allows each flavour on the plate to shine without overwhelming another. His contemporary west coast cuisine leans ‘left' with new flavours borrowed from other world cuisines and a rustic flair developed in his early career in the tree-planting canteens of the Kootenays.
